Chips History

In 1853, a native American chef named George Crum, created the recipe for potato chips while he was working in hurry for dinner in Moon’s Lake House, a popular restaurant in Saratoga, New York. He was in an “I’ll show him!” mood for Cornelius Vanderbilt, who was dissatisfied with his fried potatoes. He cut the potatoes into as thin slices as he could and fried them in an oil pan, until becoming crunchy. After serving the thin fried potatoes, Vanderbilt enjoyed the taste of chips, and potato chips were born. 

Chips production steps

Agria potatoes are used in factories for the production of chips because these potato shapes are more elongated than other potato types. Agria potatoes are high in starch, which makes them more suitable for making chips. The steps of potato chips production include:

  1. Buying and storing potatoes in a temperature-controlled environment
  2. Removing the potato skin with a machine called peeler 
  3. Using special blades to cut potatoes into very thin slices 
  4. Washing the slices and dropping them into a large tank of very hot vegetable oil
  5. Frying continues until reaching the chips to the right color and crispness
  6. Removing from the oil and seasoning in a seasoning drum
  7. Packing into bags and using nitrogen gas to preserve chips from getting stale

Packing 

Chips should be packed to maintain the quality and chips’ color. To pack the chips, high-quality Nitrogen gas is added to the pack. People always complain about the amount of “air” in chips packs. What is it? Note that the Oxygen reacts with ingredients such as the oil in chips and breaks them down. So oxygen is not added to the packs, it is Nitrogen that preserves the color, quality, and other properties of chips. Why nitrogen? Because it is an inert gas and reacts poorly to other chemical materials. However, Oxygen is highly reactive to other molecules which causes food to spoil or lose its freshness and some qualities. After the nitrogen is inserted into the chip bag to prepare a “modified atmosphere packaging”, the packaging is sealed.

Storage

The best way to keep chips fresh is to store them in a cool, dry place, and away from sunlight. In addition, storing chips in their original bag or box helps to keep them fresh.
