Persian spicy pistachio soup is suitable for every diet for the fact that this soup is vegan. The estimated preparation time for this delicious soup is 25 minutes.

The ingredients you need for 4 servings:

  • 150g pistachio kernels
  • 1 onion and 2 cloves of garlic
  • 1 leek
  • Fresh ginger (about 2 cm)
  • Lime juice
  • Salt, pepper and cumin
  • 3 cups of vegetable broth
  • 3 cups of plant milk (if you are not looking for a vegan choice you can use regular milk as an alternative)

A quick instruction:

Primarily, you need to sauté minced garlic, chopped onion and ginger together and add the leek and put the mixture on medium heat and swirl the mixture until it softens. Then grind the pistachio kernels in a processor and add it to the pot and add salt, pepper and cumin. If you are a fan of chili, now is the time for you to add your chili peppers as well.  

After a few minutes add vegetable broth, plant milk and let the pot boil with the lid closed for 45 minutes. Don’t forget that you need low heat for this procedure. After 45 minutes you shall blend the soup with a mixer to reach a tick soup. 

To serve, you can add lime juice or sprinkle pistachio or olive oil. Enjoy!

  • Persian chicken with pistachios

This dish is a traditional Persian cuisine and has a true taste of Iran.

The ingredients you need for 4 servings:

  • 900g chicken thighs (skinless-boneless)
  • 2 onions
  • ¾ teaspoon turmeric
  • Salt and pepper
  • A pinch of saffron
  • ¼ cup rosewater
  • 250g spinach
  • 1/3 cup pistachios
  • Approximate number of 50 mint leaves
  • A cup of chicken stock
  • 1 cup of verjuice
  • Olive oil (1tbsp)

A quick instruction:

Take a sauté pan, add oil and let it heat. Then add the chicken thighs and let the chicken take a golden color. Don’t cook the chicken all the way! Remove the chickens after they turn golden. Now you shall sauté the onions. Add the turmeric and pepper. After a few minutes pour in the chicken stock and verjuice into your pan and bring to the boil. Reduce the heat to low levels and return the chicken back the pan. Add salt and close the lid. After 15 minutes remove the lid and add saffron and rose water and stir. Keep in mind not to overuse rosewater since it has a strong smell. Add the spinach and mint and then add the grinded pistachio kernels. Serve this dish with rice. Enjoy!

  • Lemon saffron roasted pistachios (snack)

Pistachios are a healthy and nutritional nut and can be used as a table snack. Raw pistachios have a strong nutty taste, hence, people prefer roasted pistachios as a snack.

The ingredients you need:

  • 3 cups of shelled raw pistachios
  • The juice of 3 lemons
  • 3 tsp sea salt
  • A pinch of saffron

A quick instruction:

Preheat the oven to 325 Fahrenheit degrees which is equivalent to 160 Celsius degrees. Mix all the ingredients together until all pistachios are coated. Spread the pistachios on the baking tray on a baking sheet and let in bake in the oven for 20-30 minutes. Let the pistachios cool.
